The feel of the place

Cantonese
Stepping into the streets and alleys of Guangzhou, the Cantonese surrounding you on all sides may leave you a little bewildered. Although newcomers keep pouring into the city, Cantonese still flows through its streets and alleys. This ancient city has its own stubborn side, and what makes it feel familiar is the dignity beneath its bustle.
Leung (靓)
It is well known that southern China is home to many gentle women, yet Guangzhou is rarely praised for its beauty; it is known only for its warm, free-spirited nature. But real Guangzhou people are no longer the lean figures of old imagination. 'Good-looking guys' (靓仔) and 'pretty girls' (靓女) are everywhere.
Inclusiveness
Shaped by the traditional culture of the old city, Guangzhou people of the new era, like their forebears, warmly and generously embrace everything the city has to offer. Faced with an influx of newcomers, the city has never made them feel isolated. Each person carries their own conviction for survival and moves through a city that combines ancient and modern character.
Distinctive Street Life
The word 'shijing' (市井, 'street life') used here is in no way pejorative. It is simply an objective portrait of the street scenes and local characters of Guangzhou. Guangzhou's street life differs from Chengdu's easygoing comfort, as it has a touch more hustle. It also differs from the aloofness of Beijing's alleyways, as it has a touch more composure. And it is far from the deep heritage of Shanghai's lanes, as it has a touch more warmth.
Flower City
Guangzhou is known as the 'Flower City', and the name is well deserved. Beautiful flowers are sold on streets and in alleys all over the city. The annual flower fair is a major event in southern China.
Congee and Fine Soups
Among China's congee traditions, Guangzhou's stands out for its vast variety and distinctive flavours. Beyond being nutritious and delicious, some congees also have special medicinal value. Lao huo liang tang (老火靓汤, 'slow-simmered fine soup') is an essential on every Guangzhou dining table. It is called 'lao huo' because the ingredients are simmered slowly over low heat in a clay pot, taking anywhere from 3–4 hours to a full day. As the saying goes: drink fine soup every day, and every day brings a good mood!
Mian (面)
Meaning 'you are giving me face' (是您给面子). Before your visit, it may be fun to learn a few Cantonese phrases. Being mistaken for a local is a very enjoyable experience.

Cantonese

The most frequently used Cantonese expression is probably 'm̀h gōi' (唔该), meaning 'thank you', which can also mean 'excuse me' or 'trouble you'. In Guangzhou, say 'm̀h gōi' before asking someone for help or asking them to move aside. 'Daap ngau saai' (打扰晒) is a colloquial phrase for asking someone to handle something on your behalf, conveying both thanks and apology. 'Ching bei ha min' (请俾下面) means 'please give me some face'. 'Nei bei' (你俾

Preparation and Advice

Language

The city mainly communicates in Cantonese. Young and middle-aged people can converse in fluent Mandarin, but communicating with older people is more difficult, and they may not understand spoken Mandarin at all.

The annual average temperature is 22.5℃, with a low of 0℃ and a high of up to 39.1℃, and rainfall is abundant throughout the year. Eat & drink

“Food is heaven for the people, and flavour comes first in food” is one of the most popular catchphrases among Guangzhou residents. Cantonese cuisine is famed nationwide for its meticulous craftsmanship. Master chefs can peel the skin off a live fish whole, mix the fish bones and flesh with other delicacies, and stuff them back into the fish skin to form a complete “fish” again. There is also Winter Melon Soup (冬瓜盅), which, after simmering for several hours, becomes a dish of outstanding flavour. In addition, Guangzhou people are masters of soup. Most soups are simmered for several hours, and locals are used to having a small bowl of soup before meals.

Snacks

Guangzhou's snacks are endless: har gow (shrimp dumplings), glutinous rice chicken, wonton noodles, turnip cake, water chestnut cake, Shahe rice noodles, stir-fried field snails, beef bone soup, savoury fried pancakes, pig blood congee, cheung fun (rice noodle rolls), beef brisket rice noodles and more. Beijing Road is home to many famous beef offal shops and juice bars, as well as cha chaan tengs serving congee, rice noodles, noodles and milk tea. Around Shangxiajiu Road you will find many traditional Guangzhou-style snacks, such as the double-skin milk from Nanxin at Xiguan Renjia and street-side beef offal. On Baohua Road, several unassuming noodle shops serve pig trotter noodles and beef brisket noodles, which stand out among Guangzhou's noodle dishes. Xihao Erma Road, Guangda Road, Hongde Road and Guangcong Road, all renowned food streets, are equally unforgettable.

Signature Dishes

Eight-Treasure Winter Melon Soup, Baiyun Pig Trotters, White-Cut Chicken, Salt-Baked Chicken, Roast Goose, Roast Suckling Pig and Wenchang Chicken.

Cantonese cuisine has nearly 300 major dishes, about 80 percent of which are based on poultry, with chicken taking the lead. There is a saying in Cantonese cuisine: “no feast without chicken.”

Keyuan Garden Museum

One of the Four Famous Gardens of Lingnan, first built during the Daoguang reign of the Qing dynasty. The garden has an irregular polygonal plan, and its pavilions, towers, water features, bridges, halls and courtyards are all complete. Many of its buildings are named with the character “可” (ke), such as Ke Tower, Ke Pavilion, Ke Hall and Ke Islet. Although built of wood, stone and grey brick, the structures are very refined, with carved windows, railings, “beauty-leaning” seats, and even individually styled floors. The garden is rich in southern character and is a jewel of Guangdong garden design.

Nanshe Ancient Village

The ancient village was built in the early Southern Song dynasty. Most of its houses use red sandstone as foundation stones, with red sandstone strips forming the wall bases and red sandstone also framing the doorways. The walls are built with the famous pea-green water-ground bricks of Dongguan from the Ming and Qing dynasties. The contrast between red and pea green is charming, and it looks especially vivid and lively in the sunlight.
